For a quick breakfast, I pan fry some deli meat on high (turkey or ham), cut off the heat, and then cook the eggs with the heat from the pan. One important thing I've learned for eggs, underdone is miles better than overdone.

300 for fried over easy. They come out white instead of brown.

I always use my non-stick wok. To save calories I crack 2 eggs into a cup of Egg Beaters, S/P, Tabasco, snip a few chives for color. Shake up, spray wok with Pam, scramble at medium heat tossing with a silicon spatula.
After the last toss I sprinkle with grated cheddar, cover for a few seconds to melt, serve on a warm low carb tortilla.
According to my wife and others, especially picky grandchildren, mine are the best.
I cook bacon and/or sausage, ham either separately or in the wok first.

After three pages you've probably gotten the answers but...
1: Set the eggs out on the counter to warm up, don't crack a cold egg into hot pan.
2: Get an egg pan and learn to flip without a spatula.

I saw this method on fried eggs on good eats a year ago and since then its the only way I cook fried eggs.
start with non stick pan with lid. Any type of lid will do, a plate or lids from other pans, but a glass one works best. I finally bought a non stick pan with its own glass lid and it works best. On my gas stove I have it on a setting of 1.5 or 2 out of 7 so on the low side of medium low setting.
Important: Crack eggs in container then pour eggs in pan at one time. I use a paper plate bowl. Cover and set timer.
For sunnyside up cook for 3.15 -3:25
For over easy cook for 3:30- 3:40
For over medium cook for 3:45- 3:55
For over hard cook for 4:00 or more
No need to flip, just slide them on a plate. The yoke will look a little different than you traditional fried egg. After a few tries you don't need to time them any more you can tell by looking at them when they are done which is why a glass cover works best.

i have been on a french style scrambled lately. they are so creamy smooth.

I put a little half and half and american cheese (real american cheese, not the singles) into my beaten eggs and then scramble them over low to medium heat.
