Nice, Janky. That shows perfectly how evenly the reverse sear cooks the steak. The longer cook time also gives the connective tissues and fat more time to break down, making the steak more tender, IMO.

Sounds like a bone-in ribeye and not a tomahawk.

Why on earth would you buy a steak without plans to grill it? I understand reverse sears and skillets.... They work fine, but u have confused me. Too hot to grill outside? Huh? Buy a steak and then try to find a way to cook it? Interesting.

Reverse sear in oven and skillet.

Heat index of 110 doesn't make me want to stand around a hot fire. I wasn't planning on buying steak, but saw an exceptional deal and pounced on it knowing that if I turned over a few rocks on here I'd get a good method on how to cook it. I'm generally best at grilling steaks and only have limited experience on cooking them using an oven, so I just thought I'd ask.

Understood. Reverse sear is what ur looking for.... Do you have a cast iron skillet?

Dude, you don't need to babysit a reverse sear:

Go outside
Light your fire
Go inside
Let the grill get to 180*-225* (you decide)
Go outside
Throw steak on with thermometer
Go inside
Once the thermometer hits 118*
Go outside
Take it off
Open vents to get fire really hot
Go inside
Once the fire is really hot
Go outside
Throw it on for about 2 minutes or so
Take it off and cut off your fire.
Go inside

You really don't have to babysit it. However, the fact that you are making all of these excuses tells me you are probably going to frick it up and put in into the microwave anyway. Good luck.

my thermometer doesn't have an alarm feature or connect to my phone. It's just a thermometer.

I smoked some pork on the BGE Saturday while it was balls hot outside... just rolled it so I could read the thermometer out the back window.

You boys really need to look in to remote thermometers. You can get one pretty cheap.

I have one with a probe that I used once it was close, so I could see the internal temp without having to go out and stick a thermometer in, but no, it's not remote.

Still, didn't have to go in and out constantly.

I just stay outside for the most part. Between cold vodka and a ceiling fan I am fine with the heat.
