Homemade Ketchup Recipe

Homemade Ketchup:

2 small cans tomato paste
.25 cup, maple syrup
.5 cup of apple cider vinegar
.25 cup of water.
.5 teaspoon salt.
.5 teaspoon onion powder.
.25 Garlic powder

Mix real good turn on heat, cook to boil, simmer for 10 minutes covered. Stirring often. Place in jar/ cover and refrigerate for up to a week.

I haven't made it yet, but I remember seeing someone say to put Xantham Gum to get that store bought consistency. It's a very small amount to use.

What does this mean exactly? Wait a week to eat it? Or only good for a week? Which I don’t understand.

Those ingredients don’t sound bad at all yet I want to puke just from the smell of ketchup

I'd ignore it, it sounds like FDA "rules." Stuff loaded with vinegar and salt will last for years. The only caution I'd add to that is your most likely form of contamination is you cleansing and handling the container before you put the ketchup in it.
