I keep meaning to post that we tried this and the cracklin came out AMAZING-best I have ever had.
we didn't do ice in the fire, but we fried twice at the temps you used.
I used walmart spanish lard.
Same pot as you and on a fryer burner. Seasoned with Slap ya Mama, salt and cayenne.
I have another belly in the freezer I can't WAIT to cook up. Thank you for the cracklinspiration.

We did two batches. The first one we forgot the vinegar (I bought it for the recipe) and they came out so awesome I didn't want to take a chance with the second batch.
I'll try a few next time but I am hesitant to mess with perfection.

In this past, I've gotten in New Orleans from Restaurant Depot and Gourmet Butcher Block in Gretna.
Couldn't say where to find in BR.
