it look slike a lot of online places are out of their 5gallon stuff.

I was about to ask if you lived in the area, then saw Nashville as your town. Lucky bastard. I think they are headquartered in Nashville. They do quarterly releases of their strains. I'm trying to deplete my stock before the next release. I got overzealous the last 2 releases and thought i'd be able to brew way more than i actually can.

As i stated above, they do quarterly releases. They did one in September or October i believe, then one in February. Send them a facebook message, they reply quickly. They should be able to give you a timeframe of their next release.

End of June. I found one of the retailer on the site that has some of their stuff for 2 bucks more.

I ordered Sour Solera Blend (accharomyces, Brettanomyces, Lactobacillus, Pediococcus) im going to use to pitch all at once, just have to get a yeast for whatever im brewing for it.

also got a Sour Weapon and a Saison blend to keep in the fridge until i know more of what im doing.

You don't need a yeast. It has a sach yeast included. It's an all in one pitch. FWIW, Sacharomyces is your "clean" yeast strain.

Sour Weapon works great for quick sours. I've used it twice. I also have Saison Parfait, i'm gong to use for a brett saison. Using Saison parfait and then pitching Funk Weapon #2 and letting it sit for a few months to funk up.

ok great. Im guessing it will work with a lighter semi wheat (probably 20-30%) beer.

well i wanted to do a quick sour as well with the Sour weapon, BUT he called and said they were out, so i got them to throw in another Funk. looks like imm be looking for some lacto to pair with the Funk 2&3 i got.

Definitely. Well, i say that, i haven't used it, but the specs on that strain are like 100% attenuation, so if it has sugar, it will ferment.

I have 1 and 3 in carboys and 2 is on deck. Just grab a lacto or a lacto and a pedio from La Homebrew.

I have a hoppy saison fermented with the mad fermentationist blend on tap right now. Only let it sit around a month so not much brett character. Saved some yeast and plan to do a traditional saison when this one kicks to let the brett develop.

Also have the sour weapon and funktown 2. Next month I plan to do an apricot sour by pitching the sour weapon then funktown 2, a peach golden sour with the sour weapon and 644, and a brett ipa with the funktown 2.

Thanks for the info, just ordered a few lbs of hops.


On another note, the last sour I attempted turned out awful. I know I aerated the wort way too much before adding the lacto but was hoping it would be alright. No such luck, it smelled awful, exactly like vomit, and very potent. I boiled it anyway and it's been sitting for a week now fermenting and still smells disgusting. From the little bit of reading I've done that flavor/smell doesn't usually go away so it's looking like this one is definitely gonna be a dumper.

I am attempting to harvest some yeast myself. I got some blackberries, apples, and lemons from my yard and am attempting to get something going with them. We'll see how they turn out. Not holding out much hope for my first attempt but gotta start somewhere. Any tips or tricks from some of y'all that have done this would be great.

Add persimmon to it and call it your 5th Anniversary beer.

Everyone I have let try it likes it, but you really would not know it is a saison without someone saying so. Next time I goto lahomebrew I could leave a bottle if you are interested in trying it.

Kegged my grisette Saturday evening and drank a bunch of it yesterday. Danstar Belle Saison yeast took it from 1.033 to 1.002, making it right at 4.0%. Dry hopped with Amarillo and Citra. It's super crushable and drinks so easy.

you made me feel bad for alienating the Citra. so i changed up my neipa hops to Amarillo, Citra, and Lemondrop.

I tasted my OG sample and it is very lemony. Im excited to see how it turns out. pitched yeast sunday morning after chilling to 67. first DH addition will be probably tomorrow.

I love Citra. Definitely my favorite hop. Curious how yours ends up with the Lemondrop hops. I haven't used that one yet.

me either.

I was just trying to get more of a lemonade flavor rather than the grapefruit juice. It smelled more lemony. Only time will tell. I might need to start brewing 10 gallon batches because these are going quick once tapped.
