Did this with my Brett Pale Ale.

My water profile was
Ca 91.0
Mg 10.4
Na 8.0
SO4 86.4
Cl 130.6

Added first round of dry hops 4 days after visible fermentation started added the second half once fermentation slowed down.

How do you like your purchase so far? I am thinking of using these as my fermentors based on their stackability, material, and compactness. I will be stacking them in an upright freezer transformed into a Fermentation chamber. How have your keg transfers gone? Do you find it difficult to harvest the yeast without a dump valve? So far so good, but I still have my first batch in it, so I can't give a full review yet. The o-rings around the valve and thermowell are going to need to be replaced before I do another batch. Way too soft and they squeeze out when the nut is tightened down. I like the thermowell as I can stick my temperature controller probe in there and get actual beer temperature as opposed to taping it to the side and hoping it's close.

Wasn't too bad. Did the TSP wash per directions and then a starsan soak to passivate. Everything came off with one TSP wash.

Brewed an APA with several New Zealand hops I've never used on Saturday. This one was using Moteuka, Rakau and Wakatu hops from the Bin-Q homebrew clearance sale. Brew day went great, aside from the fact that I was too efficient. This was supposed to be 1.055.

Turned out great. Lots of citrus and stone fruit mixed with a little brett funk.

Going to brew a saison tomorrow. Will use Wyeast 3724 as the primary strain along with lacto and a brett blend.

I'm having some serious stability issues with NEIPAs. Bottling. All grain

My last couple have been great. Indeed deserving to be called NEIPA. Great bright yellow/orange color. Juicy.

But after less than two weeks the color starts to turn almost greyish. After 3 weeks it's Grey.

What gives?

Long aged sour i assume? My bootleg biology vials should ship out by wednesday at the latest. Trying to decide my first brew.

Either a split batch of a longer aged brett with 2 of the funk weapon vials pitched in secondary after a primary of probably the belgian saison strain.

Or, a long aged sour split batch with the solera blend and the sour weapon.

I'll be kegging my citra pale ale sunday most likely. Steady fermentation still happening as of saturday night. Need to look at it again. Have a starsan foam head bubbling out of the airlock.

I had issues once with some old Starsan solution that I used to sanitize my bottles changing the color of a beer to a somewhat purplish color. Maybe that's it?

It was StarSan that was sitting around in a bucket for a while. I probably should have made a fresh solution for bottling.

This makes more sense than the concentrate itself going bad. The starsan I use is probably 4 or 5 years old.

You can keep starsan solution almost indefinitely in a seal container, but 5Star has said that it will degrade over time in an open one.

After moving to Jefferson Parish I had to switch to using RO water when making a starsan solution. If I use JP water the solution turns cloudy in a couple hours. They say that shite is still safe to use, but it looks gross so there is no way I'm using it.

My beer tasted awesome. When the color changed it still tasted fine just naturally diminished hop forwardness

I don't know. It was just a few bottles I filled from the keg and submitted to a contest. One of the judges told me how weird it looked, even though it tasted fine. Think he even sent me a picture, and it definitely had a weirdish purple tinge to it.
