The heat at flameout might have caused some of the more pronounced acridness. I've read a few articles and cold steeping and adding the coffee at kegging/bottling is suggested. That's what i've done.
Also, if you are grinding your beans, needs to be on a course setting.

Anybody brewing this weekend?
We're brewing an amaretto barrel aged stout. Will probably have a misogynistic inspired name considering it should taste like Chocolate Sundae.
Smaller version of our TenFIDY clone with cocoa nibs basically.

I'm going to try and get a 5 gallon stout and a 1o gallon Citra Blonde done, for sure going to brew up the stout tomorrow, we'll see if I have time for both.
Then I hope my one remaining keg has enough beer to get me through the Fla-Bama game that I'm sure will require several beers

I named my most recent beer The Slutty Belgian due to how easy it drinks.

Yep. Hunted the last 3 weekends in a row with no success. Picked a bad weekend to skip and take care of things around the house.
Hooked everything up and cleaned it all up. All the valves and hoses and plugging in and out was certainly more to deal with but very cool.
Cleaned 3 kegs with hot PBW too.
Just need to mount pump to stand with some scrap wood or something soon.

It was nice meeting you too, definitely let me know how you like the beer. I'm finishing my glass of IPA now then plan to try the RIS you gave me while I watch the kids decorate the tree. Thanks again for the beers.

So i'm not brewing again until the week of Christmas (getting another keg too), so to pass the time between then and now, I believe i'm going to start building up a culture of mixed fermentation based on the dregs i have reserved in my fridge.
Was doing some reading in my sour beers book last night, and was reading through how to keep a viable culture sustained for a period of time.
And since i have a 1 liter erlinmeyer i don't use for anything (use the 2L for all starters) i believe i'll use that and see if i can grow anything from the dregs.
Right now, i have a mason jar with dregs from Hill Farmstead Dorothy, Hill Farmstead Arthur, and Goose Island Matilda. I believe all of these are Brett only beers. And i've heard the reports that HF bottles with a sach strain rather than Brett, so pickup of the brett culture might be minimal. I won't be brewing a brett ale until January or February so i figured i'd have fun playing around with trying to build something up off of what is left viable from the dregs.

Also, still thinking about doing mixed batches. Might buy 3 - 2 gallon buckets, and make a 6 gallon batch.

yes, the hops don't bother the brett like it will the lacto. Just remember that they can and probably will change the hop character of the beer.
