Same here. Its kinda fun sometimes to open one up and try and guess which beer it was....On a few occasions, it wasn't so fun.

Today's the day. Gonna brew my first batch. Irish red ale kit that came with my brew kit. Hope I don't screw it up

Pretty hard to do. Just make sure everything is super clean and sanitized. Do you have star san? Put some in a spray bottle and keep it within hands reach at all times.

Decided not to be horrendously lazy this weekend, so brewing an American pale ale. Based off of the recipe for stone pale ale in their book. Very loosely based I may add.
10 lbs pale ale
1.5 lbs C40L
.5 lbs C60L

Calypso and cascade hopping this one, fermentation with S04

When i added the first Round of hops it almost boiled over and left this behind. Do I need to scrape that off the sides and get it back in the boil?

With the pot I'm using I think I have way too much surface area of my wort on heat. I guess I won't know if I burned it until I drink it though

I take a spray bottle full of distilled water and spray the sides down to wash the hops back into the boil. Also, you can adjust it to "mist" and use that to beat down any boil flair ups.

I based mine on the "Saison - Classic Version" in the book Farmhouse Ales by Phil Markowski. His calls for 90% pilsner and 10% wheat malt. I went with 85% 2-row, 10% oats, 5% sugar (to dry it out). I used yeast that I harvested from a bottle of JK El Cedro - their saison yeast plus brett. I mashed for 90 min at 148 and used sorachi ace hops to like 22 IBUs.

That sounds way out of my league, but I'm still going to try it. I know for one thing in the batch I brewed today that I don't like the brew kettle I have. It's way to big to boil 2.5 gallons of wort.

No reason not to boil more than 2.5 gallons. Start working your way up to a full boil

I did find out that if you start with 2.5 gallons and boil for 60min, there ain't much left

Err. I bet so.

Full wort boils are pretty good first step into making better beer.

When you get that thing up to a boil cut the flame back to where its just rolling not full blast.

It only got up to a roaring boil for about 10 min before I cut it back. I checked it this morning and the yeast is eating something in there. Already got some bubbling in the air lock

Kegged a Praline Belgian Strong Ale on Friday and tried it last night. Really happy with it, just hope the carb tabs work for the ones I sent to Dixie Cup.

Raspberries vs Blackberries? Both are on sale and I'm thinking about racking a portion of my sweet potato saison onto some.
