To get that high of fermentation temps I will have to wait until the summer and let it sit in the garage. Of course, it looks like It will be June before I have a free weekend again

Am I missing anything by not having any magnesium in my brewing water?
Been using RO water with only CaCl and Gypsum additions.
Nope, there is enough calcium and magnesium in the grain it self to support a healthy fermentation.
I do add in a half tsp of the wyeast yeast nutrient to every batch to add other minerals the yeast need.

Might need to find some of that.
Thanks.

Don't use foreign hops in an APA. Please.

There are several Australian and New Zeland hop varieties are excellent in American Pale Ales.
Love me some Galaxy, Australian Summer, Nelson Sauvin among others.

Exactly.
Had a famous local craft brewery's Nelson Sauvin pale ale last night and it was great.

Talked to a hop importer a few weeks ago about getting a small amount of some of the new experimental hops.
He was telling me that the next big hops growing region may be South Africa. SAB had been cultivating their own hops for years.
They have two new varieties called Southern Passion and Southern Aroma that are supposed to be excellent and put South Africa on the hop map.

You talking about lemon drop and Medusa and...equinox?
Posted on 4/25/14 at 12:10 pm to s14suspense
Yeah, I was looking to get some HBC 366 which is now equinox.
I saw a brewer on twitter raving about it and wanted to see if there was anywhere I could purchase a pound.

For the record, that was an IPA. 7.4%

That's assuming I'm in a position to know such things.

I've used and like (American hops):
Mosaic
Citra
Cascade
Centennial
Chinook
Simcoe
Warrior
Amarillo
Haven't used, but plan to soon:
Galaxy
Motueka
Nelsin Sauvin
Sorachi Ace
Pacifica
Delta (for multiple reasons)

Cummings and his crew found out that Delta is a cross of two well-known varieties: the earthy English Fuggles and floral Cascade—the quintessential flavor of West Coast beers—which is itself a blend of Fuggles and the Russian hop Serebrianke

The flavor was similarly complex, with citrusy, melon-like notes and an herbal, grassy quali

One of the kegs on my system is starting to foam quite a bit every pour. Nothing has changed other than adding the second keg. What should I check or where should I start to solve this? It's going to make bottling from it much tougher
Posted on 4/27/14 at 9:24 pm to LoneStarTiger
You crank up pressures or temps rise drastically?
Posted on 4/27/14 at 9:30 pm to s14suspense
No. Well, I turned the gas off to that keg while I carbonated the other. I did have the fridge door open quite a hit while getting the other keg set up and all, but it shouldn't have warmed up that much.
