I know this is a long shot, but does anyone know of a source of high temp cheddar or pepper jack cheese for sausage making in BR?

I haven't found any local. I order from the sausage maker website. When in a pinch, I just cube up some Tillamook or something. It will melt, but not a huge difference.

It seems like Bass Pro used to carry it. Call one of your local AG stores and hit up the manager or one of the guys in the meat department….they can probably hook you up
or point you in the right direction.

I know one of the Carter`s stores uses it. The manager recommended some of their burgers with high temp cheese, while i was looking at other stuff.

It does make a difference, it tastes better. That square chunk of cheese may look good in your sausage but I like real cheese in mine instead of the plastic feeling high temp.
Just use a quality cheese and it will be fine.
