Help: Roux separating from gumbo

I used room temp broth, but had previously frozen sausage that was still pretty cold. Once the gumbo is simmering, I checked on it and roux was on top.

How can I fix this? Cooked gumbo for years and never had this happen

Consensus is old flour and perhaps adding stock too fast.

This could very well be your issue. I always add the hot/warm roux to the simmering stock, one ladle at a time stirring until it's incorporated with each addition. I've never had it separate that way. This is certainly not the only way to do it. I generally make a lot of gumbo at one time, so I don't add stock to the roux pot as it's not large enough.

As also suggested, the flour could have been old even if not expired and had excess moisture.

I just made gumbo with this flour about 2 weeks ago. Is there a way to fix it?

Heat it to a slow boil and whisk like crazy, it will come together

Sorry I didn't address the fix it, but as suggested above, whisking has worked for some folks. Seems like we had a recent thread from someone else with the problem and that worked. I've never had to do it, so I can only go by what others have experienced.

Skim the top and put it in a blender while adding liquid from the gumbo.
