I brown the ham steak whole. then cut it up in chunks and let it break down further when the beans are boiling.
The best white beans I've ever made were after a holiday when I kept the bone and leftover meat attached of the ham and put that in the pot of boiling beans.

I use tasso rather than plain ham. I prefer Bellue's tasso from Bellue's on Scenic Hwy in BR. Been using it for years. It has a great flavor and browns very well.
