Hallelujah! Muscadine

After four years of fighting multiple undetermined species of insects, birds and mammals, I achieved muscadine harvest. Cowart muscadine grown in a container bag.
Almost two gallons from my vine.
I needed insecticides, bird netting and the magic touch was spraying the entire thing down in garlic powder water. Allegedly, opossums hate garlic.
I feel like I’ve just lassoed a winged Pegasus.

Working on some as we speak.
Boil in large pot covered in water. How long? Till I think it’s right (about an hour and a half at a low boil. Use spoon to mash. Strain seeds and pulp. Allow to cool. Can be refrigerated at this point.
To get clear jelly, you’ll need to filter the juice.
1) fine mesh strainer
2)single layer paper towel
3) doubled paper towel
4) coffee filter
Juice still won’t be clear, but will clear when heated.
If you want cloudy jelly, you can stop after the first paper towel filter. If you do this, the jelly will eventually turn brown from the retained pulp.
Follow Sure-Jell recipe for cooked grape jelly.

Thanks for the advice. I plan to boil, then theow everything in a high speed blender, then strain everything in cheesecloth. More juice supposedly.
Never made it before. The gal on the YouTube video where I got this method from has a solid country voice, dog barking in the background, liquid pectin and a table full of jelly at the end.

I’d be concerned about the bitterness of the seeds in the chuck it all un the blender plan

Makes me miss my great grandparents. Used to love cutting the grass for them because they had 2 big muscadine vines. Would grab a handful on each pass.

Jesus, that's some patience
I planted a couple of Triumph vines this year. I tried a few grapes, but the purpose this year was to get established. I intentionally let the vine struggle with a lack of water in hopes the roots dig a bit deeper. Hopefully next year I'm beating back wildlife with a stick

I didn’t really plan for bitterness to be in play other than some grapes are more ripe than others. Bitterness will happen regardless, I think.
Hopefully the blended seeds will be inconsequential once filtered out.
Threre is always year five, if this one turns sour.

Update: It must be jelly ‘cause jam don’t shake like this:
In: 2 gallons Cowart muscadine
Out: 23 pints (8oz) plus 3 pints (16oz).
Grand total of 232 oz.
Jelly of the Month will be muscadine for the foreseeable future.
