I tried it once and it became a soupy mess that I quickly regretted. But PS is a MUST as a side dish with gumbo. My preference is

But by all means...if you insist on putting you PS in with the gumbo, knock yourself out.

A very small amount of rice.....most people in Texas put way too much rice in their gumbo.......PS on the side and I dunk a spoon full in the gumbo....repeat.

Me too--rice in the bowl and PS on the side. Though I certainly eat and enjoy gumbo sans PC.

How many restaurants have you been to that serve potato salad with gumbo? I can't remember ever going to a single restaurant that did.

Exactly--potato salad & gumbo is a bayou Lafourche & river parishes thing. I can think of dozens of restaurants serving this combo, and it's SOP for a plate lunch or fundraising dinner takeout think. Potato salad is ubiquitous in the part of Acadiana east of the Atchafalaya.

I put both in gumbo. Potato salad thickens it.
