wouldn't chicken and pork gumbo with the rice cooked in the gumbo liquid essentially just be jambalaya?

Aren't boudin and jambalaya very closely related anyway?

Although, they look similar, I’ll make the argument that they are not closely related.

Boudin has pork liver, jambalaya does not. Jambalaya has smoked sausage, boudin does not. Both are traditional essential flavors to their dish.

Boudin - meat and veggies are cooked and mixed with the cooked rice

Jambalaya - meat and veggies are cooked and then the rice is cooked with the meat

I mean... that's pretty similar.

The liver component is the real difference maker.

Liver, smoked sausage, rice cooked separate vs mixed with cooked rice. Yeah, it looks similar, but I can’t say it is similar.

The main factor in Jambalaya is meat and smoked sausage with the rice cooked together.

This is basically difference between the Isaac Toups gumbo recipe that I use, and his jambalaya that I’ve tried.
