gonna season w/ salt, pepper, onion powder, garlic powder and lemon juice and let sit over night.

Tomorrow will lightly batter them in flower and cook in a cast iron skillet w/ butter/olive oil 3 min per side then will finish them in the over at 400 for about 5 minutes

How are you going to cook that many at one time?
The only way would be to grill them. I would re-think the whole SS crab idea.

I want to know how it turns out. That's a lot at one time. Won't they lost the crispness when you put them in the oven?

Are you using a light batter?

after I briefly sautee them I am gonna dry em in paper towels then back in 400 degree oven. I would think that would help crisp them.

Also, very light batter. Just a very light dusting of flower.

I'm only cooking about 15 of them tomorrow. I might get 2 skillets going at once. I have a 18" and a 12"

Me too. I've only done softshells 1x before and I pan fried/sauteed them. Didn't finish them in the oven. Also only did about 6 of em.



If I remember I'll try and take pics.
