Grilled Quesadillas

Already posted on the FBD, but did quesadillas completely on the grill on a whim.


Started by throwing some serrano peppers on the induction cook top. It didn't work well.


I took it out to the grill...


Cooked some chicken.


Loaded up the quesadilla before cooking on the grill.


Served with a beer sour cream, and hatch chili salsa.


Finished product - everything was cooked on the grill after the induction cooktop failure...


This was great. The grilled chicken, onions, and serrano peppers kicked it up a notch. The tough part is making sure you don't burn the quesadillas over direct flame. I cooked them over indirect heat until the cheese melted and then moved to direct heat for a bit of char.

Looks great. Did you substitute bacon for tortilla chips? Thats something I would do.

bacon, cheese, chicken, and lettuce in that one.

It's a fun way to layer and works well. Finish it on the flatgrill

Doing good, for the most part. How ya been?

Funny seeing you in Fl, when you were so far away prior.

You tried to cook the peppers on the induction with no pan? Just the peppers sitting on top of the burner?

It worked on my gas cooktop...

My Blackstone griddle gets used a ton for quesadillas. Made some last week with leftover pulled pork from Memorial Day weekend's smoke.

Looks great! Homemade quesadilla is so, so good. Would eat one every day, if I could!

Damn, B. That looks delicious. I have some pulled pork in the freezer. I'll make some of those later this week.

I'm going to try it but will use grated block cheese instead of the bag cheese.

Check the thread on thawing pulled pork so you give yourself enough time
