Grilled Chicken Breast

I have my grilled chicken breast down. Split boneless breast in half keep attached. Depending on thickness I may checker board the meat for even cooking. I marinate the chicken in either a Greek homemade liquid marinade or Italian marinade. On occasion I will just marinate chicken in a brine and use s,p,g and finish it off with bbq sauce. I cook the split breast about 3.5 min per side over wood and sometimes briquettes then straight into a container with lid to steam for 15 min before serving.

Sort of looking for ideas to change it up. I have played around with Asian flavors in the past. Just wanted to see how everyone grills their chicken breast.

Cook to internal temperature (preferably 150 for chicken breast), not time.

One of our favorite things to do with split chicken breasts is grill and then make chicken salad with the leftovers. Serve with baked chicken skins.

I've had the best results with dry brining overnight in the fridge, seasoning, and then just grilling to desired internal temp.
