Grillades and Grits-With or Without Tomatoes?

We had the Besh version for Mother's Day with tomatoes. While it was good, it was not as good as the "brown" version, to me. I prefer one along the lines of the Plantation cookbook recipe in the recipe book.

What I did like about it was that it used pork which I enjoyed more than the beef, though veal is quite good. Pork tenderloin was used. Very tasty.

I like a little tomato in my beef grillades.
But what I really like are the bayou cajun grilled pork grillades (not wet cooked).

Nice contribution. I prefer a small amount of diced tomatoes (1 14-oz can) to a batch. I too prefer pork over beef, not that beef is bad, but veal trumps all, in my opinion.

folse's version at seafood revolution is amazing!! it's made with short ribs and served w/ creole tomato grits


i had his beef debris and poached eggs this past sunday that i would say is just as good.

With tomatoes. Use some diced tomatoes, it shouldn't be a red sauce though.

Haven't had it there, but I tasted someone else's dish and it was very good.

Does a couple of tbsp.'s of tomato paste count? The recipe I've used in the past calls for it, right before you start simmering your meat/pork/veal.

This is for all intents and purposes a "brown" version which I also prefer, and the "tomato" flavor is negligible.

The tomato product adds a sweetness I don't like as much. If I need an acidic component, a little wine or vinegar or even a bit of lemon juice does the trick for me. Besh's version is not heavy on the tomatoes, but more than I like.

No tomatoes for me thanks. Prefer the brown version. Preferably cooked with duck fat.

You people are crazy. Preferring grillades without tomatoes is fine. Acting like its not a stable ingredient of 90% of the legit recipes out there is an act of delusion. I think you may not realize what's in your food.

I always brown my grillades then throw in onions & a drained can of rotel, brown that real well, make my gravy (beautiful rusty brown color) & serve over medium grain rice. Ain't nothing wrong with that method, never had anyone turn their nose at it & most people go back for seconds.

I said it's sounds wrong because this is literally the first time I've ever heard of anyone suggesting tomatoes in grillades. My family never cooked it like that, and I've never seen it cooked like that anywhere else.

I'm by no means a food snob. Believe me, I got ridiculed for suggesting that grits at a mexican restaurant could be a tasty side item.
