Green egg paella inspired by Dave Worth

I have been dying to try this dish ever since I took a paella class in Spain 3 years ago and luckily Dave Worth reminded me today. Needed another 3 minutes to get a really good crisp on the bottom but not a bad first try.

All the veggies

Everything minus this shrimp. Biggest key here is do not touch it after this

Shrimp going on (I know this isn’t traditional paella)

This type of post is what makes this F&D board special. I watched a video not long ago from Matty Mathesion making Paella, yet yours looks better, probably because you aren’t Canadian.

That looks awesome. Did you find the shrimp picked up any of the paella flavor?

I'm completely paella ignorant, but I wonder how it would be if you grilled the shrimp when you take the paella off the fire then add to the pan for the back half of the rest

Yeah it definitely did. When I put them in, there was still a little liquid in the rice and I kinda pushed them into the rice a little bit.

Can't tell from the pics. How was the socarrat? Did you take any pics after digging in? Looks really good on top, but gotta have that crispy bottom.

That was my question, as much as I enjoy Solera, their socarrat game is weak.

But a beautiful dish, thanks for posting your efforts.

That looks absolutely amazing. I’m doing this next weekend. Thanks for the inspiration! What was your total cooking time and what was the temp? Did you have phases to it where you did X for so long then introduced something else?

And there is absolutely nothing wrong with that. You kept it simple and didn't overload it with unnecessary ingredients. This is one dish that benefits from k.i.s.

and you already know how to make it better. One tip, save some of the chopped parsley and tomatoes to garnish the dish just before serving.

Is that paella pan made for your BGE, or is it just a generic paella pan?

Something I never worried about. My understanding is paella was something the Spanish farmers/cowboys/field hands cooked out in the field. It was made using the ingredients that were all around them. Rice, onions, tomatoes and the meat.

If they had shrimp, they would have put that in. I love andouille sausage so I use that instead of chorizo. As long as you're using the correct rice and saffron along with tomatoes with onions I call that a paella.
