Got a few pounds of red beans cooking!(pictures added)

Been under the weather most of the week but finally cooking three pounds of Blue Runner dry red beans today. Got four smoked ham hocks from Bailey's in Laplace as well as andouille and smoked sausage in there. Smells terrific but I probably won't be eating any myself for a couple of days.

A day or two later of course.
Actually I consider the process of cooking a day or two before eating to be THE best cooking of beans.

I’ve been doing this the last few times I’ve made red beans. Greatly improved

4 hocks and 3 lbs is enough to feed a small army. My stomach is cramping up thinking about eating beans for more than 3 days.

Cooking down the onions, celery and bell peppers and getting the smoked hocks going. Bell peppers are from the garden and super crisp.

Sent some home with my daughter and later she sent me a message that my Granddaughter ate some and loved them. She's 19 mos. old and loves my cooking. LOl.......

Home cooked red beans is the first table food my daughter ever ate and she’s 4 now and still looks for me to cook red beans and sausage once a week. It’s her comfort food and I can’t blame her one bit.

I'll probably get roasted for this but how necessary is the entire Trinity for red beans? I find that the only necessary thing is the onions.
