Good Rabbit Recipes

Does anybody know any good ways to cook rabbit? I have 4 or 5 of them and have never cooked any before.

fry em in seasoned flour, just like squirrel.. rice, gravy and cathead biscuits..

Fried and smothered, or sauce piquant or a stew...a real stew, not a screwed up gumbo.

Might braise a farm raised one with some herbs tomorrow for a draft.

Make a pot of stone ground grits. Quarter rabbit. Fry rabbit. Set rabbit aside. Make gravy with the seasoned flour and buttermilk. Leave it soupy. Add rabbit to gravy. Cover. Simmer. Plate grits. Plate rabbit and gravy over grits. Sit before you eat. Buckling knees cause head injuries.

I have been trying to make a stuffed rabbit recipe but I am hitting walls. Fry that thing and make gravy!

Whenever I think of rabbit,I think root vegetables like carrots,radishes,rutabagas. Also,greens like collard and mustard. I make a stew with all of these vegetables and a little smoked sausage and sweet potato. Yes it is served over rice.

quarter them and sear them a bit in a big pot with some pecan oil and real butter
add a couple cups of chopped carrots,celery and white onions
keep stirring
add a can of rotel, juice and all
add a 10 ounces of chicken stock
cover and simmer about an hour.

serve with white beans and cornbread

had done this way many times.
