Good one skillet meals

It seems like in the winter, a good one skillet comfort dish is hard to beat.
I made Tuscan Chicken last night. Anybody have a recipe they care to share?
Ingredients
1 pound chicken breast tenderloins
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons olive oil, divided
12 ounces brown mushrooms, sliced
1/2 cup diced yellow onion
3 cloves garlic, minced
2/3 c. sun-dried tomatoes, chopped
1 teaspoon oregano
1/2 teaspoon thyme
1 (14.5 oz) can Cannelini Beans, drained and rinsed
2 (14.5 oz) cans fire roasted diced tomatoes
1 tablespoon sugar
Salt and pepper, to taste
Parsley for garnish
Instructions:
Season the chicken with salt and pepper. Heat 1 tablespoon of olive oil in a large sauté pan or cast iron skillet over medium-high heat, then add the chicken and brown for 3 minutes on each side.
Remove chicken and set aside on a plate. Add the remaining tablespoon olive oil to the pan. Add the sliced mushrooms in a single layer and brown, working in batches, a few minutes per side. Remove from the pan and set aside.
Add the onion and sauté for 3 minutes. Add the garlic, and sundried tomatoes. Sauté for 2 minutes. Stir in the oregano, thyme, beans, diced tomatoes, and sugar.
Transfer the chicken back to the pan and spoon some of the sauce and vegetables over top of the chicken. Cook, covered, on the stove top until the chicken is cooked through and the sauce is bubbling, about ten minutes. Return the mushrooms to the pan. Taste and add salt and pepper as needed. Serve hot, garnished with parsley.

I make a similar dish with chicken thighs
olive oil garlic and herbs or olive oil garlic capers and tomato
brown the thighs in the olive oil, saute an onion, toss in the garlic and everything else, put the thighs back in, cover and put in the oven for an hour

I actually used thighs, instead of the tenderloins the recipe calls for...

looks awesome. I hope you went back for seconds because i would eat that in about 5 bites!

1 lb hamburger
1 large onion, sliced into thin rings
2 medium Idaho potatoes, sliced thinly
1 can cream of mushroom soup + one can of water
S&P to taste
In a large skillet, brown the beef. Drain excess fat.
Add the soup and water. Mix well. Add the potatoes in a layer, then the rings. Salt and pepper the dish, bring up to a simmer, cover, then reduce to a low simmer. Cook until the potatoes are fork tender, @20-25 minutes. Tasty dish.

Brown whatever meat you have in hand ( ground pork or leftover country ham is my favorite)in a cast-iron skillet. Sweat an onion down in the drippings. Throw in some leftover black Eyed Peas and collard or turnip greens with enough pot liquor to keep it wet without being soupy. S&P to taste. Mix a half batch of your favorite cornbread recipe and pour over the mixture. Bake at 450 until GBD. Serve upside down with some green onions and chow chow.
