Good boudin recipe

I made my own boudin several years ago and it turned out just ok. I’d like to try a one that’s not just an average boudin. I’m thinking like a smoked butt as the pork I put in it.
I might not even stuff it in casings, but keep it for boudin balls, stuffing for meat, and other things like that.
I guess I’m looking for a “out of the box” boudin recipe. Or at least tips and ideas.

Went to Parish in Monroe this weekend and had boudin empanadas as an appetizer. The boudin is made in house. It was absolutely amazing. I got a strong smoke flavor from the boudin itself. And the pork in it was like pulled pork. Not like it was ground up through a meat grinder.
It just got my wheels turning and made me want to try something similar.

I used Chef Donald Link’s recipe using Boston Butt and hog liver and it came out really good. I did not smoke it as i dont care for smoked boudin. Recipe does not call for smoking. I did stuff it into casings.

Had an order of them tonight. Lawd they are good. I'm going to try to recreate them in the near future

When Cory was between restaurants years ago, he sold his boudin to the public. I remember it as being very good.

We went last night a belated anniversary dinner. A dozen Navy Coves, shrimp ceviche, boudin empanada things, caviar deviled eggs, wedge salad and spit the grouper dish. Damn it was good.
