Gonzales Style Jambalaya

I was watching a video of the Jambalaya festival and it looked like most people had whole chickens browning in the pot. I always use cubed pork. What is a true Gonzales style jambalaya?

Either. The jambalaya festival is chicken. Other contests out here are pork and sausage.
Not most people, all people. The jambalaya festival provides the ingredients. All of the jambalayas are the same.

Honestly I like pork and sausage better. But I think Gonzales style can be either.
As long as it don't have no goddamn tomaters in it.

Most people's opinion, including mine. The only time I ever cook chicken jambalaya is for the jambalaya festival.

I prefer pork and sausage, but I won't turn down one with chicken. I'm not eating a red jambalaya though.

Nah sitting this year out unfortunately. I lost my helper after last year. I gotta find somebody to man the fire next year. Good luck!

So the fire guy is the assistant? I would have thought that position required the most skill. Not trolling, just curious.

Really depends on the team. In my case we shared a lot of responsibility because we had been cooking together for so long. In some cases the cook won't let the helper touch the paddle. Some teams that I know the helper does the grunt work. Split the wood and man the fire. Gopher this and gopher that. But some teams...don't be fooled by the helper title. The helper himself cooks a damn good jambalaya.
But you are correct. Knowing what to do with the fire takes some skill.
