I’ve got a couple of racks of St Louis style ribs and a whole chicken to spatchcock going on my egg here today.

Put a brisket on about 3:45 this morning. I’d post some pics, but my phone goes full blown dumbass when trying to post from imgur. Texas post oak and rockwood hardwood lump are in the smoke box.

Trying to figure out what else to put on there... have some of the wife’s work friends coming over. May just get a couple lbs of sausage or some chicken thighs.

It’s been awhile since I’ve smoked a brisket, but I am today. I always forget how long it takes to smoke them before I commit to it... many silver cans will be consumed today!

I put a packer brisket on about midnight. It just got wrapped a few minutes ago. St. Louis ribs will go on about 11 and deer sausage about 3.

Started a bit earlier this week, Thursday went to Costco and got some St. Louis, 250 for 4 1/2 hours

Lately I can't get my green egg under 275 degrees. Luckily I will be using that temp for my ribs and pork butt

I usually set the airflow pretty tight and just give it some time to rise. Put them on when it gets to 200.
