Got this out of a Southern Living Cookbook last Summer
Easy Peanut Butter Cookies
1 cup of Peanut Butter
1 cup of Suger
1 egg
1 tsp of vanilla
Mix ingredients
Drop on a cookie sheet and make criss cross pattern with a fork. Preheat oven to 350 and bake for 12 minutes. I think it makes 2 dozen cookies.

I thought that too. Was very surprised that it did not call for flour But it actually was pretty good. I'll double check when I get home, but I am pretty sure that is it.

i've made a similar recipe before; flourless peanut butter cookies are pretty good...very rich, but good. and easy.

The only problem you might have with the PB recipe is kids allergies to peanuts. Or the parents paranoia of allergies. I know some kids really are allergic, but it seems parents today love to think their kids reaction to a food is an allergy or a case of food borne illness.
Also, don't forget right now a lot of folks are freaked about peanut butter in general.
If it were me I would stick to a simple sugar cookie recipe. Or something like that.
Here's a recipe I found online as a suggestion.
INGREDIENTS
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
