He's just trying to help you get the most out of your chuck roast. Enjoy mediocrity.

We put a chuck roast in a covered pampered chef stone dish with carrots, potatoes, a little water, and a Lipton Onion soup pouch sprinkled on top. Cook that in the oven for about 6 hours on 250. It will be falling apart. I have browned the roast before cooking before, but didn't really find much of a difference.

and when I run out of rice

This made me laugh. I've never run out of rice before gravy. I always run out of gravy, first. Bunch of gravy hogs in my family, including me. I like my rice and gravy in a bowl, sort of soupy.

I season, flour and brown the roast, regardless of the type. I add a little flour to the pot to brown, as well. I mix water, low sodium beef base that I order online and some tomato paste and heat that in the microwave. Pour it over the top and bake, covered, at 275 until very tender. Then, I take the grease off the top and serve. It's not a Yankee pot roast, though. I don't like the veggies soaking up my good gravy.
