Game day chicken and sausage gumbo

This is my first time to make chicken and sausage gumbo. Made seafood plenty of time but wife requested chicken and sausage. I'll post some updates when finished.

Let it blend flavors for the next three hours--

You smoked the chicken, then cooked it in the gumbo for 3 hours? Chicken's gonna be mushy as hell amirite?

Looks like it has a weird brown color - more like a chicken sausage gravy.

Looks a little thick for my taste but I bet it does taste good. It is more of a stew consistency. That being said, I would eat it very eagerly!

I can't stand a watery gumbo. You wanna call it stew, fine, but I will eat that over something that looks like dirty dishwater all day. Thick, dark gumbo, perfect!
