My wife and I finally had a chance to go check them out last night. The food was mostly good, but the service wasn't all that great. It seemed like maybe it was just our waiter, but it took FOREVER to get drinks. I usually like to start dinner with an old fashion. When I asked the waiter what my bourbon choices were, his first response was Crown Royal. That should have been a sign. It must have been another 20 minutes before he came back with our drinks, and I'm not exaggerating. At least it was a good drink. I ordered my second drink when our appetizers came out. I didn't get it until right before our entrees arrived.

Our appetizers and entrees were very good. My wife started with the shrimp remoulade and had the filet for her main course. The shrimp were really delicious and the filet was cooked to her liking. I had the crabmeat maison to start and the broiled pompano for an entree. Both were excellent. Dessert was a bit of a let down. Again, I think it was partially due to slow service. The wife ordered the profiteroles. There was so much ice cream that had mostly began to melt before it was served that the pastry was a little on the soggy side. In the past when we have gotten them, the ice cream scoops are usually melon baller sized. These were three full sized scoops of ice cream. I never thought you could have too much ice cream ,but i guess I was wrong. I had the chocolate pecan pie which is one of my favorite desserts. It was also very good.

All in all, it was a good experience. I think our waiter was inexperienced which led to a little bit of a let down in service. We will definitely be going back again, but will probably give them a chance to settle in before returning.

How loud was the dining room?

Also..

wtf is this? did you ask him to further expound upon your choices? guy sounds like a moron or management tell him to push Crown for whatever reason.

Similar experience. Food great, but service didn't seen as familiar w/ the food / booze. Hopefully that will improve. And yeah, it was loud! They seem to be heavily booked still - called this am and nothing available for dinner until 9:30! Good for them...

I live by the Tom Fitzmorris rule of trying new restaurants. I try to give them 6 months to work the kinks out before I try them. I think it's fair to give a place a chance.

First time I went to this location, food was great! However, recommend to order a drink when they bring you a drink! Takes way too long to get another drink! Also, this restaurant has to be the loudest restaurant I have ever been to! Could not hear other people at our table it was soooo loud!

......well I guess new restaurants are glad that not everyone has this stringent rule.

Overall I think that what he really means is, don't expect a perfect dining experience if you go too early.

It was definitely loud. I let him get away with the Crown suggestion for bourbon and just went with Maker's. I also asked him how the Pompano was presented... as in was it a whole fish or was it a fillet? He told me a was a fillet with the head on or some craziness like that. I still ordered it... glad I did.

Again, no one thing that would keep me from going back. Hopefully they will fix the few issues and turn it into a place for a nice night out without the kids.

I'll go back too. I hope it makes it. I live in 70808 and I'd like more dining options in the area.

No. What he means is he does not go to a new restaurant until it has been opened for at least six months. And if you listen to him you will know he practices this. I try to myself because it gives a place time to smooth out all operations and at that time I can give a fair assessment.

I can't see it not making it. They were full until after 9 last night. I know it's Valentine's week, but most of the tables in there were groups, not couples. I honestly think the only thing that hurt them at their last location was the location.

It will make it. George's pockets will guarantee that. That complex will develop slowly but nicely.

I have listened to him for years and I know exactly what he means. His advice is for him and him only, he is trying to help the restaurant out, letting them work the kinks out before a review that could affect their future business.

Restaurants need the people who don't follow his advice, and most do, as well advertised restaurants don't have problems in the first six months filling the seats.

I will often go to a new restaurant a month or so after opening. I expect less than perfect and usually am not expecting too much. I like to follow up after they have been open 6-8 months out and enjoy seeing their evolution over this period.

Friday, I will dine at Galatoire's Bistro, early I know, but someone has to, and I expect it to be LOUD!!!!!

Went on their second night after opening, and this is a good summary. Poor girl waiting on us-I asked her what small batch bourbons they had, and her face screwed up like I'd called her a bad name. And had to tell her the difference between the different fish that they were offering. And I could have gotten drinks faster by walking to Acme and asking for go cups.

I'll use the 6 month rule and give them another chance as the food was good, and always was at the old location, but the building itself is not an upgrade, IMO. I have never been in a dining room as loud as this one. Don't go and expect to conduct business or get your on.

I haven't been to the Bistro yet, but what is so loud? Can you hear the kitchen? Is it just other people's voices you can hear? I don't understand how it could be so loud?

What could it be compared to, in terms of sound?

I think he means that it was on the edge of town - Louisiana Country Club folks loved it, but for those of us who lived near LSU it was a hike getting out there.

Whatever. If its advice for him only why does he talk about it five times a day for the last twenty five years? It's good advice and it's one I try to use. If a restaurant can't make it six months I didn't need to go anyway.

And the above regarding location, I don't think that was much of a problem. It was mediocre food, nice bar but not much more. Within a few miles you have Ruffinos, French Market, LaCreole and even Little Village all packing them in all week, not just on weekends. There are plenty of people in the area with disposable incomes that enjoy eating out.

It was a lease and when George's bought it didn't fit his model for franchising. No real effort was made to boost its popularity at the Highland location.

That said it will do ok where it's at but it's still has to generate the revenues to tote the note on that building which was probably in the $2 million range and compete with Jubans which is hitting on all cylinders right now. But just by opening there it will generate more diners to the area which in theory should help all the restaurants.

Meatloaf you're at it again. I'll bet the two thousand you owe me double or nothing that Galatoire's was on perkins not highland. Lets bet. That's four grand you're going to owe me. Can you drop a few more people's names when you post. This will make me really believe you. Nothing worse than a name dropper. Haha
