I'm sitting on a pound of frozen tails and looking for something to do with them tonight, just nothing really heavy or complicated (like pie or etoufee). Simple and light. Any good ideas/recipes?

That mac and cheese sounds good as hell. Where can I get white truffle oil? Whole Foods?

I get it at a local place but I can't imagine Whole Foods not having it

Can substitute another oil too

I don't think pie or etouffee are complicated, so I'm not sure what constitutes complicated to you.

You could make some crawfish tacos. Season and sauté the crawfish and garnish with whatever you like in a shrimp taco, for example.

Crawfish rolls like lobster rolls aren't heavy on sauce.

Crawfish cakes.

Crawfish and corn soup.

Crawfish salad.

Crawfish and grits.

Ok I think we have a winner. How about a good crawfish fettuccine recipe that doesn't contain a gallon of heavy cream and a pound of butter. Anybody got one?? TIA

3T of butter and 1 cup of half-n-half. Melt over Medium heat, then add 1/2 cup of Romano and 1/2 cup of Parmesan. Stir, reduce heat to low, add fettuccine. Add chopped green onions, and crawfish tails. Season according to taste.

Sauté them in herbs and a little butter. Toss with pasta. It will taste fine if seasoned well.
