Frozen brisket

Bought a brisket Thursday. Let it sit on the counter all evening then put it in the fridge. Pulled it out about an hour ago and the center is still frozen. I didn’t really have any other choice than to go ahead and season it up and put it on the pellet grill. I have it on low which is about 180 and I plan to keep it there for an hour or 2.
Has anyone else done this before? Think the brisket will turn out ok? Did I completely ruin Easter?

It will be fine. Use a meat thermometer and check it occasionally.

Defrosting at 180 will occur REALLY REALLY fast. Not ideal, but a frozen center on a long cooks isn't something to worry about. I pull my butts and briskets from the freezer 4-5 days before smoking but I have rushed from frozen to smoked pork butts same day and it worked out.

Turned out good! I thought it could’ve been better but I’m always my toughest critic. Everyone raved about it and it was Nanny approved
