What kind do you prefer to use? If I can get my mitts on fresh reds, that's my go-to.

Well my wife loaded up on trout Sunday and yesterday - not so much today but I might use them and do this tonight. Or the redfish. Or the two sheep head she kept and thank goodness someone cleaned them for her.

I've been using large Thread Fin Shad here lately. Males only though, obviously.

Mangrove Snapper or Flounder. But I've come to prefer the salt encrusted method. I've encrusted the seasoning bouquet on the surface and not in the cavity and have had great results.
