Freezing shrimp

I take heads off. Freeze in water with shells on or off with no problems.

Heads off/shell on. Freeze fully submerged in plastic container. In a deep freezer they will last 2 years easy.

Heads off, vacuum sealed in a single layer.

I freeze them shelled and use the shells to make shrimp stock. I just shell them, put them in quart freezer bags, cover them with water and burp the bag to get all air out before sealing. Easily last 2 years like that.
When I use to freeze them in their tail shells, I'd clip the pointy end of the tail shell to keep the punctures down.

Like all have said...heads off and frozen submerged in water (peeled or unpeeled).
My FIL taught me to use milk/orange juice box containers. Cut the tops off and slice the top 1/4 of the corners so that the flaps can be folded down after the container is loaded up. Seal with freezer tape. Works great and makes for easy, stackable, non-tipping storage in the freezer.
