Forget buying unbleached flour

I've seen it pretty much everywhere I've shopped recently. Bread flour is non-existent.

Dunno where you are, but I keep reminding people that the larger bakery suppliers are indeed still handling flour in 50 lb sacks. Locally in NOLA, Koerner on Jeff Hwy sells a 50 lb bag of King Arthur Sir Galahad (like AP, unbleached) for about $18. You can pay online or via phone and they will load it into your car curbside. Share with the neighbors if 50 lbs is too much for you.
Also in NOLA, Bellegarde bakery sells stoneground whole wheat, ground on site. You have to order a week in advance for Thursday only pickup or shipping. It's expensive, but it's also absolutely fresh.
RE: bread flour being unavailable, unless you're making giant NY thin crust pizzas, AP flour works just fine. Very, very few baked goods besides NY pizza, bagels, a few other things truly requires higher gluten bread flour. Plenty of shitty recipes online specify bread flour when it absolutely isn't necesssary.

So buy a 50 lb sack, it's gonna run less than $20. It's way way cheaper than buying in 5 lb bags. If there's a shortage, you can probably find a few people to share. Or, if you don't like sharing, it will store just fine in the freezer for several months.
