I think Neauxla is right. That article is correct for grilling. But you don't want a hotter faster burn with smoking.
After all the reading there are people who prefer both... but honestly the majority of the opinion out there, when it comes to smoking, is to use briquettes.

This weekend was my first time using one.... I can't believe I've gone all these years struggling to light charcoal with lighter fluid. I will never light charcoal any other way from now on.

Never used one of those, but it appears that the way you have the wood set up, it had to have caught on fire. Is there a way you could place it to smolder without active flames?

Placed the wood? I guess I could have just laid them on top of the coals. I poured the lit coals from the chimney starter into the center, and only center, of the unlit coals. I "dug" out a hole to place them in. Following the Minion Method. Not sure how else I could put or have put the wood other than just on top. But I was basing my placement off of everything else I've seen in pictures.

Thanks. But I can take criticism. That's why I posted. To get help.

But really.. It was delicous Sunday and again last night. I'll report back to say whether it's still good tonight.

Briquettes have a funny charcoal taste to them. Lump is far superior when smoking.
