First Brisket

I'm smoking a brisket for the first time ever on my Rec Tec 700 this weekend. Wish me luck.
It's a 15 pound brisket pre-trimming, so I'm guessing it will be closer to 10-12 once I trim it. I know to cook to a temperature, not by time, but what's a rough estimate on cooking time at 225? I'm guessing 16 hours'ish. Sound about right?

Sounds about right if you roll at 225.

Not completely accurate. You cook to a temperature and then start probing for doneness. When the probe goes in several locations like it's sliding into warm butter the brisket is done.

Correct...at least IMO. Temperature is just a guide to tell me when to start probing.
And 16hrs sounds about right. You'll get identical results at 275 for 12hrs though. But knock yourself out.

I have a Rec Tec, put that baby one the extreme smoke setting and let it roll until you reach the stall ( 145-170), wrap in butcher paper, or not, crank up too 225-230 until you get 200-203 internal or until it's got the feel you want, rest for 2-3hrs in a cooler and you'll have achieved perfection! Enjoy!
