Those Monkish brews look juicetastic

They certainly are. I was lucky enough to try 4 different IPAs at the brewery. Basically tree house of the west.

then change the hop variety in the DDH

So it won't be Envie every time, then? They just called it DDH Envie because the base beer was Envie this time? I like that, too. Basically, they are creating a one off by double dry hopping another beer.

My whole point is that by keeping the current Ghost the way it is, then Parish creates a portfolio of beers that spans a variety of styles. Whether you make Ghost the dank style or Opus, I don't know that it matters.

Word is that the base beer will be Envie every time but the hop used to DDH will vary.

That's OK, too, so they can use the same labels everytime, but I think it would be even better to use different base beers.

That's crazy. I was at Monkish the first month they opened to the public. Sat on bags of grain right in the brewery because their little tap room only held about 10-12 people. Very friendly folks and even then, putting out some good beers. It was all draft at that point.

I was at Great Notion with Coater a few weeks back. Same kind of thing. Their small brewpub has an area about the size of my kitchen to brew beer. It's insane the stuff they put out, but they don't have the capacity to distribute their stuff. Once they figure out how to expand, you will be hearing from them.

Capitalism is what has brought the US from the bottom of the barrel of the brewing world to the top in just a few short years. Once we figured out how to get the government out of the picture, brewing took off. Now we have bottleshops with hundreds and hundreds of beers, instead of dozens...

Except for the all draft, not much has changed. I sat on the grain bags too. Awesome experience. Very impressive following for how tiny they are.
