I learned a lesson from my last brisket on that actually, when i wasn't at temp but it had been on for about 17 hours. It ended up being a bit dry in the flat. So tonight i was actually only at about 180 in the ribs with the quick read thermometer but the meat was pulling back a bit and i started to see the liquid pooling which led me to believe it was collagen and fat. And they ended up really good.
So, short answer, i basically went off of time and a few other visual cues.

FBD is a Barley Brown's ExperImental Hop IPA with HBC 640 hops. Very nice.
