FBD is a late night homebrew amber lager. Tonight’s weather is perfect for spontaneous fermentation, so I’m up late brewing to time it right.

The weather is so fine, I am going to be up relatively early firing up the smoker.

So you're risking 5 gallons? Why not brew a 1 gallon batch..... Split it up and then see if one doesn't go rancid in a few days? And then pitch that one?

Because it’s $13 worth of materials. I’ll pitch a known good culture I harvested last year doing what you suggested. That should mimic the good barrel cultures you find in lambic brewing. I’m doing it this way tonight to add the complexity you get from the good stuff breaking down the bad stuff you get when you cool slowly.

I switch to bourbon when I am close to completion. It is a nice gateway to the rack.
