I have some catfish fillets marinating in Italian dressing and will be frying them tonight. What should be the choice for seasoning. Zatarain's seasoned/unseasoned/lemon pepper? Cajun Land? Something else?

quote:For starters, get em out of that crap and wash em off quick. Then, pour a little buttermilk over the fillets as you oil heats to 360 degrees. Season corn meal or a 50/50 mix of corn meal and corn flour to taste with salt, pepper(black and red) and garlic powder. Or, cheat and season the mix with Tony's until it's salty enough for you...add more pepper if you want. Roll the fillets in the mix and fry a few at a time(don't crowd the pot) until golden and floating. Drain on a wire rack.

Try coating them in hot sauce, then battering as OTIS stated.

Louisiana Fish Fry is what I like to use.

I do about the same thing except I usually use an eggwash (egg + milk) instead of buttermilk with fish.
I don't like the pre-seasoned fish fry mixes because a lot of them have MSG added, and I can definitely taste it.

buttermilk with a good dash of Crystal for a soak.
Good ole yellow cornmeal with salt, pepper and MAYBE garlic powder. I like a lot of salt.
Cook as above, drain on wire rack and squeeze fresh lemon on them as soon as they come out.
Put the cat outside.
