So here's our options. I'd like to see what y'all would choose. We are doing the upgraded bar package, obviously.

1st and most importantly this should be open bar with the good booze not that crown Rousse crap
2nd No shrimp cocktail, no care
3rd if you don't get a taco bar when it is an option, you need to rexamine how you live your life.

First, let parents of bride and groom make these choices. Bride and groom will be too busy to enjoy it anyway.
Apps, I pick mini crab cakes, eggplant, and the Buffalo shrimp and tasso
Salad is good option
I would pick broccoli and cauliflower, but a potato dish is likely the safe option
Grilled fish. Most other option are meh. Probably braised pork

Does your venue do a tasting every few months? Some invite all upcoming events to a dinner where the caterer puts out samples of everything. Best way to choose for own event is to taste it yourself. Do this if you can, I remember some stuff that sounded good was very actually bland.
I'd choose for myself goat cheese tartes, crab cakes, eggplant, brie, green beans and artichokes, and pork.
