Experimenting with mirlitons - Smoked Mirliton Balls (finished photos added)

I've never cooked mirliton but I love stuffed mirlitons.
I found some at Rouse's for 4 for $1. I grabbed 8 of them, not knowing what to do. I also grabbed some raw green onion sausage.
I decided to make Smoked Mirliton Balls.
I peeled and cubed the mirlitons, tossed salt, pepper, garlic, and olive oil, let set in fridge for couple hours to de-water (there was not much).
I placed them in my smoker and smoked on a high temperature for 1-1/2 hours.
I let them cool and put in processor.
I took one pack of the raw sausage and smoked it as well. After couple hours, I de-cased it and finished cooking with finely diced onion.
Placed that in the processor. Mixed the sausage and mirliton together.
Now just waiting for it to cool to make balls with breadcrumbs, etc, and fry in skillet.

Might want to add an egg &/or a panade to help bind it together.

I did. I had to let it cool before adding the egg, so the egg wouldn't cook. Frying the balls now

Better than I was expecting since I was just experimenting. They have almost a boudin ball taste and texture
Now I need to find some kind of side dish and/or sauce to go with them.

It's a combo of dressing and a boudin ball

Looks awesome. Curious about the shrimp as well, bet they’d be great too.
