When yall make ettoufee, during the initial cook down of the trinity, lid on to retain moisture or lid off to let it evaporate?

I will keep lid off for a bit because I think it helps to brown/get some color on the veg. I then put the top on and it helps break down and get a softer texture.

Off for me. Even if I put the lid on, I’d be taking it off numerous times to stir the trinity.

I have never had the lid on when cooking Trinity for anything.

I only ever put my lid on when it's basically done, just so it doesn't thicken too much.

Off. I'm stirring pretty constantly and I want the moisture to evaporate until later.

Lid cocked. Keeps heat in but lets some water evaporate.
