Having my 3rd annual LSU away game party in a couple weeks since UT ticket prices wouldn't come down and decided to nail down a couple things today. Been experimenting with my rib method and a couple of different Crème brûlée recipes. Think I got it figured out, and thought I would post up a couple pics from today. Added a couple candied jalapeno corn muffins and my grandpa's Shoe-soles.
Nothing like burning wood. Can't wait to get back to a trailer smoker for more capacity. Enjoy!

Thinned Blues Hog and a combination of pepper jellies for the glaze. Coarse black pepper and Texas Best Rib Rub for the dry rub.

250-275 until they are done! I use the bend test and temp as a guide when to glaze. I glaze about 15 minutes before I take them off, then glaze any dry spots before wrapping in foil and letting them rest until time to eat. I don't wrap on the pit anymore. Too much trouble and these ribs are plenty tender. I do spritz after about the first hour whenever they look dry.

Only addition to ribs and a whole pork shoulder for the party will be 2 racks of these! Can't wait to even start defrosting them.

Pretty much the only way I smoke. I've been lucky enough to buy a new smoker once a year for the last few years so I stock up when I go to Texas lol. But I think I am going to go back to "The Firewood Guys" in BR. They are expensive but their measurements are actual cords, not what most people sell on Facebook etc. Their quality is better than buying from most random people too.

Hard to argue with the results, that 'Q looks incredible...but why would you buy a new smoker every year?

Just figuring out what I like. Each one has been from a different builder/different styles. Finally decided what I do enjoy and hope to buy another trailer rig or at least put my deposit down in the next year or so and get a 250 gallon smoker. Pretty much narrowed it down to 3 builders.

Did that last year. Was too far in when I realized it, so luckily I was able to resell it to someone that wanted it for fire pit wood.
