Enlighten me on New Orleans' love for sweetbreads

First, let me start off by proclaiming that I love sweetbreads...any offal for that matter.

I don't know of another American city that embraces sweetbreads like New Orleans does and I'm curious as to why that is and what the connection is. It seems like every other fine dining restaurant there has it on their menu, but it's rarely found in other cities. Why is that?

Because if it walks, crawls, flies, swims, hops and slithers, we make meals out of it and don't like to waste any of it that is considered edible.
