White sauce goes on chicken not pork.

I tried to explain this to my Seattle in-laws. But they insist on drowning ribs and pork shoulder in it whenever I have them over.

I won’t criticize someone for whatever they like to put it on, but I will criticize you for not eating it how it is invented to be eaten and then saying it isn’t good

frick all that. I grew up in Birmingham and never even heard of big bob Gibsons until pitmasters aired on TV. Theres a joint in cahaba heights with a white sauce that also sucks. People acting like white sauce on chicken is a widespread alabama thing are as stupid as people putting tomatoes in gumbo.

I don’t know if admitting you grew up in Birmingham and had never heard of big bob gibson’s bbq until 2010 is a good move before trying to lecture on bbq

For starters, nobody is acting like it is widespread, on the contrary. Quite niche and critical of places that aren’t Alabama, using it incorrectly.

I swear to god if I find a place using it on brisket, I'll burn that motherfricker down.

I had never heard of or seen it until Newk's opened in Shreveport back in 2009. If I had to guess, I'd say that's where most people's exposure outside of Alabama came from.

I wouldn't dream of using white sauce on ribs and definitely not on brisket.

I prefer my BBQ not slathered in mayo

The white sauce is made more in the tradition of a vinegar style bbq sauce not goopy like ketchup style.

I'll be honest, I think it *can* pair pretty well with brisket, especially if it is one that has a strong horseradish bite to it. That is a fairly normal combo.

I agree, particularly with the extra horseradish

I've used it on hotdogs when we were out of mustard. Pretty good

I've also used it in place of mayo here and there when we were out of mayo
