Duck Gumbo - Preparing Whole Duck

I have a whole duck to use in a gumbo. How should I prepare the bird before I add it to the pot
-Cut into pieces and pan fry the pieces
-Roast the whole duck
-Throw the whole thing or in pieces raw
-Other?

Pan fry, hard brown. Use the dregs.

depends on how much time you have and whether this a wild duck or a domestic duck.
in any event I would
break down the bird onto components and take the breasts off the carcass
roast the carcass and roast the legs
make stock from the carcass and throw the legs and breast meat in the gumbo to simmer till tender

This was my first thought and use the rendered duck fat to make the roux.

Somewhat unfortunately, I already made a chicken stock from scratch using this same technique with a chicken. I’ll definitelty do this next time though.

ok then you’re still good
take the legs off and roast till brown brown
throw them in the simmering stock and they’ll flavor it while getting tender
then put them and the breasts in, skin off of those

yes duck thighs/legs are small
I consider that all one piece
also you should add in the dark meat from the chicken

Smoke the duck.
Remove the breast meat when done enough for you. (For me it's 135*/140*)Slice for later use.
Disjoint the duck and make stock. remove any/all meat you want for the gumbo.
It becomes smoked duck/andouille, and this time of year oysters at the last minute.
