Avondale, don't give up on F&D because of one stupid comment. I think FT was just trying to be funny and make a joke about Don's. Just so you'll know, I immediately emailed the gumbo recipe to my family and friends who have moved from BR. My brother is making it this weekend. Your post was a great topic of conversation over dinner with friends tonight. It is really cool to see these old recipes because they influenced how I was taught to cook, and reflect many of the things I still cook today. Can't wait to make the etouffee. What a treasure. Thank you.

I really appreciate the post. Like I said before I was given that recipe 25-30 years ago hand written by my grandmother. I was told it was Dons recipe... I was never knew for sure and always wondered. But you nailed it word for word..
Right done to the Oleo... have not heard anyone call it that since my grandma passed away.
Now I know for sure where it came from.
also I know Dons story pretty well and I have done some work for the Landry's.
BTW I'd love the Crabmeat Au gratin recipe..

I happen to have that same '58 version of the Don's cookbook as well as the '96 called Secrets of the Original Don's Seafood & Steakhouse.
I haven't eaten in the BR Don's in many, many years. I know the seafood gumbo in Lafayette doesn't have any fish in it. I also think they make a stock rather than using just water.
The seafood gumbo recipe Avondale gave is exactly like the '58 book right down to the spelling of "Gumbo Filet".
The '96 book's seafood gumbo recipe has no fish and calls for boiling the stock shells. You can taste the stock in the Lafayette restaurant's seafood and shrimp gumbos. I get them often.
Both of the books refer to oleo. Some call for only oleo and some call for oleo or butter.

GG, you know as much as we do.. He got upset with somebody and ran out vowing never to return. He's old, we have to be careful, so when MonroeLSU pimped him, he signed off, hopefully not for good...
