Doin' a Little Cookin' Today **** Last Night of Meals Cooked Monday****

This morning I chopped all the seasonings and sliced the andouille and sausage and put the beans to soak(early)for the cooking this afternoon.
I'm cooking red beans for dinner this evening which will include chicken tenders and cornbread. Got a shrimp and andouille gumbo simmering that will be dinner on Wednesday when the cooler weather is supposed to arrive. The shrimp which are frozen will go in last when the simmering is complete to cool the gumbo down and not overcook the shrimp.
Lastly I getting ready to mix up the meat and seasonings for a meatloaf for dinner tomorrow evening. That'll be cooked on the grill.

Cooked shrimp and sausage jambalaya, Red Beans and rice with pan seared smoked sausage. Will be frying shrimp later. Have a pork butt rubbed down in the fridge for tomorrow. Being I'll be up early in the AM I plan on making a honey ham and Swiss cheese quiche after I put the butt oh the WSM.

The seasonings added to the roux for the gumbo!



Onions, bell pepper, celery, garilc and leeks cooked to soft for the meatloaf. I like cooking the seasonings down a bit before mixing them into the meatloaf. Helps to keep it moist.



Everything mixed and in the pan then in the fridge to chill the form. Going on the grill this afternoon.



Red beans done and served!



Pretty darn good! Just put a tad bit too much salt but still pretty tasty.

Yesterday was meatloaf day and it went on the grill too cook.



Done!



Time to eat! I was a lil hungry after doing yard work and smelling the meatloaf on the grill.



Moist and tender!

I would eat that entire loaf of meatloaf, all the mashed potatoes, and I would not feel one bit of remorse.

Nice work ol chap. I'd eat the shite out of all of the above. Then I'd sleep for 2 hours wake up and eat leftovers.

Alright, this is the last night of dinners I cooked on Monday. Shrimp and Andouille Gumbo!
I decided to make some homemade rolls to got with and baked some sweet potatoes also.

The rolls not 45 seconds out of the oven with some melted butter brushed on them.



Time to eat!

It all looks delicious, but now I want my husband to try meatloaf on the grill. I wonder if a sauce that didn't have sugar in it would work. Looks great!

But really, because I rarely eat bread, the rolls look super awesome.
